What can I do with old lemon peels after juicing them?

I make a lot of homemade lemonade and was wondering if there are any good uses for the lemon peels. It seems like such a waste to discard them cause they smell so good. I thought about starting a compost pile using them but I live in an apartment which makes that kind of difficult.
